CHICKEN PANCAKE

Chicken pancakes are absolutely delicious and surprisingly easy to make. Just mix all the ingredients together and make pancakes as you would normally do. Voila! you have the most delicious pancake ever! These are not only great as snacks or appetizers but you can also have them for lunch or dinner. You can also serve these as party snacks. Ingredients:
  • 1/2 lb ground chicken
  • 1 onion finely chopped
  • 1 tsp garlic paste
  • 1 green chili chopped (optional)
  • 1 tsp ginger paste
  • 1/2 tsp black pepper powder
  • 1 tsp lemon juice
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • salt to taste
  • sugar to taste
  • 2 tbsp canola oil
  • lettuce for garnishing
  • lemon wedges for garnishing
  • Mayonnaise/Ketchup as dipping sauce

Procedure:
  1. Mix all ingredients to form the batter. Make sure that it is neither too dense nor watery.
  2. Heat 2 tbsp of oil in a flat pan and gently spoon the batter, flatten it with the back of a spoon to make it as circular as possible.
  3. Turn the pancakes carefully and cook until browned on both sides.
  4. Serve with mayonnaise and/or ketchup.
  5. Garnish with lettuce and lemon wedges.
Chef's notes:
  • Increase the amount of milk or flour if your batter is too thick or too watery respectively.
  • Make no more than 3 pancakes at a single time to avoid cluttering in the pan.
  • To increase the level of heat, add more green chilies or skip them if you do not want any heat.
  • Cook this on low flame to make sure that the pancakes are cooked from inside.
  • This amount made 7 pancakes, multiply ingredients as required.
