CHEESY BRIOCHE BUNS
My little one is one hell of a fussy eater but she loves everything cheese. She is so obsessed with cheese that I think, if I just write 'cheese' on a paper and ask her to eat it up, she will eat that too! She is not the only cheese lover at our home though, her mother likes cheese too, can't blame her ;-)
Yesterday I made these super cheesy buns for a quick snack. The combination of crusty buns and the melting cheese was surreal. Try it and let me know how you liked it.

Serves: 2
Ingredients:
- 2 brioche buns cut into halves
- 1 tbsp butter
- 1 tbsp canola oil
- 3 tbsp mayonnaise
- 1 onion chopped
- 1 cup sweet corn
- 1/2 cup chopped bell pepper
- 4 tbsp chopped green onion
- 2 tbsp minced garlic
- 1 cup shredded mozzarella
- chili flakes
- 1 tsp ground pepper
- salt to taste
- sugar to taste
Procedure:
- Preheat oven at 350F.
- Butter the buns and lightly toast on a pan.
- Heat oil in a pan, add the garlic and fry till fragrant.
- Add the chopped onion, bell pepper, and green onion. Keep frying.
- Add the sweet corn, salt, pepper, and sugar. Cook for about 2 minutes.
- Turn off the flame and add the mayonnaise. Mix everything, the spread is now ready.
- Put the spread on the buns and top with shredded mozzarella.
- Transfer to oven and let it bake for 7-8 minutes.
- Sprinkle chili flakes and serve.
Chef's notes:
- This can be made using sandwich bread too.
- Add any other vegetable that you like, mushrooms, tomatoes or even shredded carrots and cabbages can be great additions.
- You can use some chopped walnuts in the spread for some crunch.
- You can sprinkle some herbs too.
