I was browsing the net to find a recipe of rice to serve my baked fish with and I bumped across this gem. It is simple, healthy, and delicious. I tweaked the original recipe a bit to suit my needs and the result was just terrific, absolutely delectable. I am going to make this often now!

Serves: 3
  • 1 cup basmati rice
  • 2 cups chicken broth / vegetable broth
  • 1 onion chopped
  • 4 tbsp chopped green onion
  • 1 bay leaf
  • 2-3 cloves
  • 3-4 peppercorns
  • 2 tbsp minced garlic
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp ghee (optional)
  1. Wash rice and soak in water.
  2. In a dutch oven, heat the oil. Temper with bay leaf, peppercorns, and cloves.
  3. Add the minced garlic and fry for half a minute.
  4. Add the chopped onion, half of the chopped green onion, turmeric, and salt.
  5. Strain the rice and add so that it is well coated with the spices.
  6. Add the broth, bring to a boil, and put on the lid.
  7. Cook for 20 mins or till rice is done.
  8. Fluff with a fork.
  9. Finish off with a pinch of sugar and ghee (optional).
  10. Garnish with remaining chopped green onions.
Chef's notes:
  • You can use butter instead of ghee.
  • You can add fresh herbs for extra flavor.
  • You can use jasmine rice instead of basmati rice, cooking time may vary in that case.
  • You can sprinkle some ground black pepper for heat.
