TURMERIC RICE
I was browsing the net to find a recipe of rice to serve my baked fish with and I bumped across this gem. It is simple, healthy, and delicious. I tweaked the original recipe a bit to suit my needs and the result was just terrific, absolutely delectable. I am going to make this often now!

Serves: 3
Ingredients:
- 1 cup basmati rice
- 2 cups chicken broth / vegetable broth
- 1 onion chopped
- 4 tbsp chopped green onion
- 1 bay leaf
- 2-3 cloves
- 3-4 peppercorns
- 2 tbsp minced garlic
- 2 tbsp olive oil
- 1 tbsp sugar
- 1 tsp ghee (optional)
Procedure:
- Wash rice and soak in water.
- In a dutch oven, heat the oil. Temper with bay leaf, peppercorns, and cloves.
- Add the minced garlic and fry for half a minute.
- Add the chopped onion, half of the chopped green onion, turmeric, and salt.
- Strain the rice and add so that it is well coated with the spices.
- Add the broth, bring to a boil, and put on the lid.
- Cook for 20 mins or till rice is done.
- Fluff with a fork.
- Finish off with a pinch of sugar and ghee (optional).
- Garnish with remaining chopped green onions.
Chef's notes:
- You can use butter instead of ghee.
- You can add fresh herbs for extra flavor.
- You can use jasmine rice instead of basmati rice, cooking time may vary in that case.
- You can sprinkle some ground black pepper for heat.
