Do you want to eat tasty food without struggling in the kitchen for hours? Well, that surely has been my cooking mantra which is why my recipes are quick and easy. There are times though when I don't even want to do that much. But, isn't that all of us? No matter how much we like cooking, some days we just want to let our hair down and relax. However, if your partner's culinary skills are limited to boiling eggs just like mine, you have no respite. In such times, the leftovers come to my rescue. I cannot begin to tell you how many recipes I might have created with leftovers. Here's one that can transform leftover rice into a delicacy. It is a life-saver and can be paired with almost anything from curries to stir-fries to baked fish or chicken.
ABOUT THE RECIPE
This is my home-style egg fried rice that can be prepared in minutes with leftover rice (or freshly cooked rice), eggs, and choice of vegetables. The only thing that you ought to do is chop the veggies and fry the eggs and veggies, and then mix everything with the rice. That's it, no sauce and no spices. Isn't it simple? Do not let the simplicity undermine the taste of this dish. This delicious blend of scrambled eggs, fresh vegetables and rice is the perfect one-pot meal for busy weeknights and great for entertaining guests too. Do you need any more reason to try it?
I have used only carrots, beans, and spring onions. You can use peppers, onions, mushrooms, and other veggies too. Chop the veggies finely to ensure they are not raw and chunky. Crack the eggs in a bowl and beat them with a pinch of salt and pepper until fluffy. Mince some ginger and garlic too. The first step is to fry the eggs, scramble them, and keep aside. The next step is to fry the minced garlic and ginger in hot oil and then add the veggies and cook them through. Finally, add the rice and eggs and toss everything, check the seasonings and sprinkle some green onion. You are good to go! Enjoy as it is or serve it with chicken, meat, or fish.

Can I use fresh rice for fried rice?
Fried rice is a great way to use leftovers but that doesn't mean you cannot use freshly cooked rice.
Does Rice have to be cold to make fried rice?
Fried rice tastes best if the rice grains are non-sticky and the overall texture is flaky. To achieve that, it is best to use leftover rice which is drier than freshly cooked rice. If however, you intend to use freshly cooked rice, I recommend to let the rice rest in a refrigerator for at least an hour before proceeding to make fried rice.
What kind of rice can I use to make fried rice?
Fried rice can be made with plain white rice, long-grain rice like basmati or jasmine rice.
How can I keep fried rice from getting mushy?
If you keep cooked rice in the refrigerator, it helps in firming up the rice which ensures that your fried rice will be nice and fluffy. If you don't have leftover rice, keep freshly cooked rice in the refrigerator for a few hours before cooking.
SERVING SUGGESTIONS

STORAGE SUGGESTIONS
Cool the fried rice and transfer into an airtight storage container or ziplock plastic bag and then store it in the refrigerator. I recommend consuming stored fried rice within 2-3 days.

EGG FRIED RICE
Ingredients:
- 2 cups cooked basmati rice
- 2-3 eggs
- 1 carrot finely chopped
- 10-15 green beans finely chopped
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 4 tbsp chopped spring onion
- salt to taste
- sugar to taste
- black pepper to taste
- 2 tbsp oil
Instructions:
- Crack eggs in a bowl, add a pinch of salt and pepper. Beat until fluffy.
- Heat oil in a heavy-bottomed pan. Fry the egg and scramble into small pieces. Remove the fried eggs.
- Add a little more oil in the same pan. Fry the minced garlic and ginger until fragrant.
- Add the chopped vegetables, salt, sugar, and, black pepper. Fry until the veggies are tender.
- Add the cooked rice and scrambled eggs. Toss everything together and continue cooking for 2-3 mins stirring constantly.
- Sprinkle some chopped spring onion greens and black pepper. Serve hot.
Notes:
- You can add other vegetables like bell peppers, mushrooms, and corn to the fried rice.
- To make this non-vegetarian, you can add shrimps, bacon or rotisserie chicken.
